4 oz Philadelphia Cream Cheese;
2 tb Sugar
1 tb Milk
1 8-oz tub Cool Whip?; thawed
-& divided
1 6-oz or 9 in prepared
-chocolate flavored crumb
2 c Cold milk
2 pk (4 oz) JELL-O Chocolate
-Flavor Instant Pudding &
-Pie Filling

Beat cream cheese, sugar and 1 tablespoon milk in large bowl until
smooth. Gently stir in 1/2 of the whipped topping. Spread on bottom
of crust.

Pour 2 cups milk into large bowl. Add pudding mixes. Beat with wire
whisk 2 minutes. (Mixture will be thick.) Pour over cream cheese

Refrigerate 4 hours or until set. Just before serving, spread
remaining whipped topping over pudding layer. Garnish with shaved
chocolate or chocolate curls.

Preheat oven to 275 degrees. Use a 10″ spring form pan. Grease pan,
sprinkle with flour. Leave quite a bit of flour in the pan.

In the microwave: melt
1/2 lb. butter 8 squares unsweetened (bitter) chocolate 2 cups hot
tap water Whisk to mix well.

Cake Ingredients

4 cups sifted flour 3 teaspoons baking soda 4 cups sugar 1 cup sour cream 4
beaten eggs 2 teaspoons vanilla 4 teaspoons very strong coffee healthy
pinch chili powder

Blend eggs and sugar. Add coffee and sour cream. Blend. Add vanilla. Add
the dry ingredients.

Reheat the chocolate mix and add to above ingredients. It must be pretty
hot when added.

Pour into pan. Put pan on a baking sheet as it may overflow. Cook at 275
for two (2) hours. Anything that spills is your treat to eat.

You can cut this recipe in half and bake in a 10 x 14 pan. If you use this
method, bake at 350 for 35 minutes.

Frosting NOTE: ***Triple this recipe for the cake in the spring form pan.

1/2 cup sugar 1 heaping tablespoon flour Whisk to mix.

Add: 1 tablespoon butter 1 teaspoon vanilla pinch chili powder 1 teaspoon
strong coffee 2 squares bitter chocolate 1 cup milk

Put all ingredients in bowl and microwave for 6 minutes or more. Remove and
whisk. Return to microwave for 4 minutes. Remove and whisk again. Repeat
until the mixture resembles chocolate pudding. Pour on cake while hot.

I would imagine you could cook this frosting on the stove top or in a
double boiler. We are used to “nuking” it.

Jicama Pancakes

1 1/2 c Shredded jicama (see Note)
1 Lemon, Juice of
2 tb Grated onion
I large egg,, beaten
I tablespoon all-purpose
1/2 ts Salt
1 ts Minced habanero chile
1 Russet potato,, peeled
3 tb Vegetable oil,, or as needed

Toss the jicama in a colander with the lemon juice and let sit for 15
minutes. Using your hands, squeeze as much water as you possibly can out of
the jicama, a handful at a time. Spread on a doubled layer of paper towels
and blot with more paper towels. In a large bowl, toss the jicama with the
onion, egg, flour, salt, and tossing well to be sure the chile is evenly
distributed in the mixture. Grate the potato into the bowl on the largest
hole of the grater and toss again.

In a large cast-iron skillet, heat I tablespoon of the oil over medium-high
heat until very hot. Form the mixture into 2 1/2-inch patties and saute
them in batches, turning with a metal spatula when brown on one side, until
crisp and brown. Add more oil to the skillet as necessary and keep the
pancakes warm on a paper towel-lined baking sheet in a warm oven while you
finish cooking the rest. Serve warm.

Yield: 6-8 servings

Note: remove the outer brown layer of skin from the jicama. Shred on the
largest hole of a grater.

Jewelled Fruitcake Miniatures

8 oz Dried apricots; cut up
8 oz Pitted dates; cut up
1 1/2 c Brazil nuts; chopped
1 c Maraschino cherries;
-drained, cut in half
1 c Candied pineapple; cut up
3/4 c Flour
3/4 c Sugar
1/2 ts Baking powder
1/2 ts Salt
3 Eggs
1 1/2 ts Vanilla

Heat oven to 325 degrees. Place paper nut cups or miniature paper cups on
baking sheet. Mix ingredients throughly. Spoon about 1 tablespoon into each
cup. Bake for 25 mins. or until a toothpick comes out clean. If they are
getting too dark cover with tinfoil the last 10 mins. Cool completely. Wrap
securely and store in refrigerator. Makes about 3 1/2 doz. To make in small
loaf pans: Line pans with aluminium foil and bake for 35-40 mins. Makes 6

Japanese Fruitcake With Filling

1 tb Orange rind,grated
1 ts Vanilla
1 ts Allspice

1/2 c Pecans,chopped
1 tb Flour
1 1/2 c Coconut,grated
Candied cherries (opt)

2 tb Flour
1 Juice of 3 lemons
1 c Sugar
1 cn Pineapple (20 oz)*
2 Egg yolks
1/2 c Pecans chopped

1. Preheat oven to 350’F.~ 2. Grease and flour 3 9-inch layer cake pans.
Cream butter and sugar with electric mixer until soft and fluffy. Beat eggs
until light and add to butter-sugar mixture.~ 3. Sift flour, salt, and
baking powder together and add alternately to batter with milk. Stir in
vanilla and orange rind; beat well. Spread 2/3 of the batter into 2 of the
3 prepared pans.~ 4. Add allspice and ginger to remaining batter. Sprinkle
1 tablespoon flour over the raisins and nuts to coat, then add to batter
and mix well. Spread spiced batter into remaining third pan.~ 5. Bake
layers at 350’F. for 30 minutes, or until cake tests down and sides shrink
from pan. Invert on wire rack and allow to cool.~ 6. When completely cool,
spread fruit filling between layers and thinly over the top and side of
cake, using a flat-bladed knife to spread evenly. (Place the fruit/spice
layer in the middle when stacking layers.) Cover top and side of cake with
the coconut. Decorate with red and green candied cherries in a wreath
design if desired.~ ~ *** FRUIT FILLING ***~ * – pineapple should be
crushed & drained.~ Combine all ingredients in top half of a double boiler
over, not in, simmering water and cook, stirring frequently, until mixture
thickens. It should be quite thick. Remove from heat and allow to cool,
stirring occasionally.

Jamocha Cheesecake

Nonstick cooking spray
15 Chocolate-wafer cookies
1 Container; (15 oz) part-skim
-ricotta cheese
1/4 c European-style unsweetened
-cocoa powder
1/4 c Sugar
1 Envelope unflavored gelatin
1/2 c Double-strength coffee
3/4 c Skim milk
1 ts Vanilla extract
1 ts Rum extract
1 Container; (8 0z) nondairy
-whipped topping

1. Grease 8 inch springform pan with cooking spray. Crush all but 2
cookies; sprinkle 1 tablespoon crumbs over pan bottom. In food processor,
blend cheese, cocoa and dash salt. In saucepan, combine sugar, gelatin and
coffee; soak 1 minute. Heat over low heat until clear. Off heat, stir in
milk, extracts and cheese mixture. Place pan in bowl of ice and water; stir
until thickened. Fold in all but 1/2 cup topping; pour into loaf pan.
Cover; chill at least 4 hours.

2. Remove pan side. Pat remaining cookie crumbs onto cake side. Garnish
with reserved topping and cookies. Makes 12 servings, 162 calories each.

1 tb Grated orange rind

Cream the butter and cream in the sugar until fluffy. If mixing by hand,
separate the eggs, blend the beaten yolks into the butter mixture, sift the
flour with the baking powder and salt, add alternately with the milk and
vanilla, and fold in the beaten whites last. If using a mixer, beat the
whole eggs in at medium to high speed, turn off the mixer and add the flour
mixture, then turn to lowest speed and add the milk and vanilla. When
smooth pour into a 10-inch tube pan or a 10 x 14 x 2-inch pan. Bake in a
moderate 350 degree oven until the cake springs back when touched lightly
with a fingertip or use the toothpick test. When baked, let the cake cool
10 minutes or more, loosen from the pan, and turn out on a rack.

Frosting: Mix 3/4 cup orange juice and 2 tablespoons lemon juice with 3/4
cup sugar. Add 1 tablespoon grated orange rind also, if you like. Drizzle
over the cake, being sure not to soak it all in one spot. Let the cake

Note: No baking time is given in the recipe for making this in a tube or
Bundt cake pan. My educated guess would be between 45 minutes and an hour
but I would keep a careful eye on the cake while baking.

Jack-o’-lantern Cake

1 1/2 c Cake flour
2 1/2 ts Baking powder
1/8 ts Salt
1/2 c Butter (1/2 stick); room
1 c Granulated sugar
3 Egg yolks; at room
-temperature, well beaten
1 ts Grated lemon rind
3/4 c Milk

5 c (to 6) confectioners’ sugar
2 Egg whites
2 tb Liquid glucose
Orange and black food

1. Preheat the oven to 375 F. Line an 8-inch round pan with wax paper and
grease. 2. Sift together the flour, baking powder, and salt. Set aside. 3.
With an electric mixer, cream the butter and sugar until light and fluffy.
Gradually beat in the egg yolks, then add the lemon rind. Fold in the flour
mixture in 3 batches, alternating with the milk. 4. Spoon the batter into
the prepared pan. Bake until a cake tester inserted in the center comes out
clean, about 35 minutes. Let stand 5 minutes, then unmold and transfer to a
rack. 5. For the covering, sift 4 1/2 cups of the confectioners’ sugar into
a bowl. Make a well in the center, add 1 egg white, the glucose, and orange
food coloring. Stir until a dough forms. 6. Transfer to a work surface
dusted with confectioners’ sugar and knead briefly. 7. Roll out the cake
covering to a sheet about 1/8 inch thick. 8. Gently place the sheet on top
of the cooled cake and smooth the sides. Trim the excess and reserve. 9.
From the trimmings cut shapes for the lid. Tint the remaining cake covering
trimmings with black food coloring. Roll out thinly and cut shapes for the
face. 10. Brush the undersides with water and arrange the face and lid on
the cake. 11. Place 1 tablespoon of the remaining egg white in a bowl and
stir in enough confectioners’ sugar to make a thick frosting. Tint with
black food coloring, fill a paper piping bag and pipe the outline of the

Cook’s Tip: If preferred, use ready-made roll-out cake covering or rolled
fondant, available at specialist cake decorating supply shops and some
supermarkets. Knead in food coloring, if required.

Italian Lemon Cheesecake

1 1/3 c Part-skim ricotta cheese
4 oz Neufchatel or light cream
1/3 c Sugar
2 Eggs; separated
1/2 c Low-fat milk
1/4 c White all-purpose flour
2 tb Lemon juice
2 ts Grated lemon rind
1 ts Vanilla extract
4 Sheets phyllo pastry
1 1/2 tb Unsalted butter or margarine

3 oz Dried apricots; roughly
1/2 c Unsweetened apple juice

1. Preheat the oven to 325F. Generously coat a 9″ pie plate with
vegetable cooking spray.

2. In a food processor or blender process the cheeses, sugar, egg
yolks, milk, flour, lemon juice, lemon rind, and vanilla until
smooth. In a bowl whip the egg whites until stiff and gently fold
into the mixture.

3. Place the 4 sheets of phyllo pastry into the prepared pan,
crisscrossing them on the bottom and brushing each lightly with some
of the butter or margarine. Trim the overhanging pastry leaving a 2″
border all around.

(There’s an illustration that I can’t really reproduce here that
shows how to place the phyllo leaves. Basically, the bottom 2 are
crossed and then one is placed horizontal and the other vertical.)

4. Place the filling in the pan, roll the outer edges of the
overlapping pastry toward the filling, tucking it in and rolling it
to create a rim. Brush the edges lightly with the remaining butter or

5. Place the pan on a cookie sheet, put in the center of the oven.
Place a baking pan with 2″ of water on the lower rack of the oven.
Bake for 50 to 55 minutes or until set. Remove from the oven and
allow to cool on a rack. Chill for 6 hours or overnight.

6. Top with the apricot spread, if desired, and serve the pie
chilled, cut into wedges.

*This pie can be baked without the crust as a pudding.

reduce heat, and simmer very slowly for 45 minutes, or until smooth
and softened, stirring occasionally.

2. Allow the mixture to cool slightly, then process in a food
processor or blender until smooth.

3. Place in a covered container and chill for 4 to 6 hours or
overnight. Serve chilled.

*Other dried fruits such as peaches or prunes can be substituted for
the apricots.

This can be used as a fruit spread on toast, a topping on pies or as a
natural low-sugar flavoring for plain yogurt.

16 oz Ricotta cheese
1/2 c Sugar
2 ts Grated lemon peel
6 Egg yolks
1/2 c All-purpose flour
1/2 c Finely chopped candied fruit
1 1/2 oz Semisweet chocolate; grated
3 Egg whites
Fresh fruit; if desired

Heat oven to 350 degrees. Grease round pan, 9×1-1/2″. Mix 1 tablespoon
sugar and the bread crumbs. Coat pan with sugar mixture. Mix cheese, 1/2
cup sugar and the lemon peel in medium bowl. Stir in egg yolks, one at a
time. Stir in flour, candied fruit and chocolate. Beat egg whites on high
speed in medium bowl until stiff. Fold cheese mixture into egg whites. Pour
into pan. Bake about 45 minutes or until set and edge is light brown.
Refrigerate until cool. Loosen edge; remove cake from pan. Cover and
refrigerate until chilled. Garnish with fresh fruit.
